Yum! Summer is the time to enjoy more vegetarian meals, even if you're not vegetarian, because they're so delicious and the fresh offerings are abundant. I can always remember my Mom saying (when I was a kid growing up on my parents' farm)that when we had fresh corn-on-the-cob in the field and tomatoes on the vine to pick every day, she could just live on native tomatoes and corn, and I think we did, many hot, summer days! Tomato sandwiches, sometime w/ cukes and maybe cheese, with a side of corn are some of my favorite summer meal memories!

On another note, our family is trying to cook more often because we tend to eat breakfast for dinner most nights (because it's fast and easy). After learning that Annabelle is a bit on the slim side, Matt worried that she needed to eat more well rounded meals. So, now we're making an effort to present delicious omnivore and vegetarian meals each day. We've noticed she's getting adorable arm rolls since we started our new meal plan.
